Wise Skies Kitchen: Potato Salad
Virgo is the Goddess of the Grain. It can be a fun time to play with recipes using barley, oats, rye, wheat, and millet. When Virgo traits are out of balance, you may want to add some nerve-calming St. John’s Wort, Skullcap, Lavender, or Valerian into your health routine temporarily. Dill, fennel, blackberry, marjoram, licorice, and parsley are all beneficial herbs to work with the Virgo New Moon as well. Check out one of my all time favorite recipes for potato salad that utilizes a few of the above mentioned herbs, and as always, twist it up to make it your own.
Potato Salad

Use a variety of red, Idaho, purple, and Yukon potatoes to make this dish as visually appealing as it is tasty. Serves 6 to 8.
3 pounds potatoes
1/2 cup salt
2 large eggs, hard-boiled, roughly chopped
2 tablespoons spicy brown mustard
Juice and zest of one lemon
1 teaspoon white wine vinegar
1 1/4 teaspoons kosher salt
1 teaspoon capers, chopped roughly
4 tablespoons mayonnaise
1 cup red onion, diced into small pieces
1/2 cup fresh dill, chopped roughly
2/3 cup flat leaf parsley, chopped roughly
Three pounds of potatoes
Place the potatoes in a large pot and add enough water to cover them by 2 inches. Use cold water, if you do not, the potatoes will not cook evenly. Add the salt and bring the mixture to a boil. Lower the heat and simmer until a knife inserted into one of the potatoes meets no resistance, about 15 to 20 minutes. Drain the potatoes and when they are cool enough to handle, break them into rough chunks by hand and place them into a bowl. Then let the potatoes cool completely.
Add all the remaining ingredients into the bowl with the potatoes. Mix everything together and season the potato salad according to taste.
