Spring vibes coupled with Saint Patrick’s Day falling on Friday made me consider what fun green recipe we could share this week. I pulled a Cilantro Pesto recipe from The Big Bend Cookbook. Pesto is a very versatile and forgiving recipe. I love to put it in scrambled eggs, on turkey roll ups, and quite frankly I can just eat it right out of the jar. In The Big Bend Cookbook, the Cilantro Pesto is used on the El Pastor hot dog from Cow Dog’s food trailer in Alpine, Texas. You start with a basic hot dog of your choice, and add pineapple bits, chopped red onion, a lime mayonnaise and then add the Cilantro Pesto.
